Passing it around. El Tesoro Reposado. Oh, it's a limited edition Binny's.
Are we going to do an intro or are we just going to?
It's called The Cold Open.
It's a term to art for the first sketch on Saturday Night Live.
I saw that movie. I'm joking. I'm joking.
I'm just joking.
I'm just joking.
Can we get the crickets back at least? All right. Welcome back to...
Welcome back. Like you're in a place. I never understood that one.
You're listening to Three Dudes and Alexi.
No, I walked in it lower.
Okay.
All right. It's my favorite Steve Gutenberg movie.
It is a funnier... Definitely a funnier name.
That would be Three Men and a Little Lady. Three Men and a Baby?
That's the first one. Then the sequel, Three Men and a Lady. And then it's Four Weddings and a Funeral, I think is the third.
Wait, that's...
You just blew my mind. That was plausible. Okay.
What do you get?
It smells awesome.
It does smell good.
This is El Tesoro Reposado, Binny's Handpicks. We're doing handpicks today. I brought a bunch of stuff.
We do travel the world to go to get the best barrels of tequila, rum, brandy, whisky, you name it, we look for it. We got some really good stuff here today. The first thing, we're going to start with tequila.
El Tesoro, fantastic tequilas on the shelf. The way you look for them is their cork is a small tohono wheel, which is what's used to... That's what it is.
I thought it was one of those Chinese coins, but we...
Yeah, yeah.
Why would it be a Chinese coin on a Mexican tequila?
I don't know, square in the middle?
I don't know. You're right.
That was silly.
That's where the donkey post goes, or mule.
For those of you who don't speak Espanol, El Tesoro is Spanish for The Tesoro.
We're starting off at this level. This is great. You are listening to Barrel to Bottle, The Binny's Podcast.
Back in your feed with handpicked tequilas. I'm Greg, I do communications for Binny's Beverage Depot.
I'm Dan, I do spirits.
Lexi, I'm unsocial.
Roger, beer, iced tea, seltzers. And the other.
He gets more and more defensive about his job as time goes by. Roger, you are single-handedly saving the beer industry by bringing back Binny's collaborations and the oldest, most obscure European beer styles you could think of.
Thank you. Thank you.
It's not going unnoticed. Dan, you brought a box full of handpicks. We're starting in tequila.
El Tesoro Reposado.
They make awesome stuff from the La Altenia Distillery. Look for them by their cap. It looks like a Tohono wheel.
It in fact seems to be made out of some sort of stone.
It was loud when I dropped it on the table.
But no, they make beautiful tequilas. This is a handpick Reposado. Pick it up.
There isn't a ton left in the chain. So, look for it. Buy it.
You're going to love it.
What kind of proof is this?
Delateful.
Bottle says 40% elk by vol.
I was thinking maybe it was a little higher. So, it's got a little bit of spice on the finish, but the flavor is incredible. I've always been a huge fan of El Tesoro.
It's green.
It's giving a little bit of green to me. I like it.
Yeah, I mean...
Green like pear?
Not fruity green, vegetal green.
Oh, okay. Yeah, aloe, that kind of thing.
A repo that hasn't lost its agave.
Well said.
Super fresh, rich agave on the palate, and then, yeah, you get a touch of that spice from the barrel.
And like vanilla. There's like a plush vanilla quality.
But no.
But it's not overwhelming.
I think that's one of the most misunderstood things about the Reposado category is that if people geek out on tequila, they seem to almost shame people that you have to just drink Blanco if you want to geek out on tequila.
Like, they vary tremendously. Like, some of them, yes, have more Barrel character than others.
And depending on how it's made, I would guess that a big part of this retaining some of that agave character is that they use the Tejona wheel and then they're incorporating the smashed piñas in the mash, right?
That's correct. Yep.
So, I mean, there's a lot of variables. So you can have a repo that still has a great agave character, which is I think what you have here.
Yeah. That's fantastic stuff. $79.99.
Nice.
But again, we are running a little light on this in the chain.
There are still some out there, so seek it out. Call your local Binny's, try to find some. It's definitely worth having.
Delicious.
Get it before it's gone.
Next, we have another tequila. This is from Lobos. It's another Reposado handpick.
Lobos is a brand they do. They finish all of their tequila in PX Sherry barrels.
Love that sound effect.
That's a good one.
This bottle looks like a big old bottle.
This one spent additional time in Sherry reserve barrels.
Okay, completely different quality here.
I think it gets a lot from the PX Sherry in particular. All their stuff has that sweet richness from the Sherry casks. This has another layer of complexity with the additional time in Sherry.
Whoa.
That's pretty interesting.
The Sherry is very prevalent. I don't know if I've ever had a tequila like this.
It's really good.
$39.99.
Triple barrel finished. I gotta have something else to say about this.
Wait, so it's three barrels or just Sherry?
It's American oak PX Sherry and Sherry reserve, so it is a triple barrel.
Well, the American oak makes more sense as to the nose is big butter.
Butter, that's it. It's a big butter and butterscotch.
This tastes much more like what you expect from an H tequila than the El Tesoro. It doesn't have as much of the fresh agave, but it's definitely there.
It's like a confectionary.
Yeah, it's definitely got Werther's original poppycock.
Poppycock. I saw it and bought it because I thought of you was Werther's original popcorn.
Yes, it's good, right?
It was good, yeah.
I did a side by side between that and crunch and munch and we were like, gotta give it to the Werther's.
Was it blind though?
The Werther's is expensive too and I was like, sometimes you just have to treat yourself.
It was like close out at my local grocery store.
Does it have nuts?
No, it's just popcorn.
Just popcorn with caramel on it?
Also, melted Werther's originals.
It's not caramel corn though, it's popcorn with the caramel.
It's coated like caramel corn, but with the special Werther's recipe of caramel toffee.
Which is the best.
I wouldn't even accidentally end up in that aisle in the grocery store. I don't know how.
It was on the end cap where they have all the close outs at my local grocery store.
That for me was the Cheetos Buffalo Macaroni and Cheese.
Was that an up or down thumb?
I don't know. I haven't tried it yet. I just had to buy it.
He's hiding it here.
Oh, okay.
No, I smoked it.
We're all going to try it.
Did that literally say flavor blasted on it?
It seems like the kind of product.
Not literally, but every indication on the box was a heavy metal guitar solo. Played by a cartoon cat.
Don't forget the Cheetos dust is like a food ingredient now, thanks to the Korean corndog movement.
You ever had a corndog? They're really good.
They say make it cheesier, crunchier. They suggested putting Cheetos on top of the Cheeto macaroni and cheese.
Ooh, hat on a hat.
Hat on a hat, yeah.
Well, texturally, it's sound.
You're right.
I mean, I just mean it's not seemingly senseless if they want you to have some crunch on top of the macaroni and cheese.
All right, wanna talk about rum?
Let's talk about rum.
These rums are cast-strength, and I have non-cast-strength whiskey, and I was thinking whiskey last, but...
We're professionals, we can handle this.
Let's do this.
I got a 10-year El Dorado here, Guyana Demerara Distillers Limited. They do coat their barrels with a thin layer of caramelized sugar, so...
What?
It's not so much for the sweetness, but it gives a lot of body and roundness to their rums.
Inside?
Yes.
They put sugar as a coating inside the barrel.
Correct. Before they put the rum in, yes. Again, it's not to make it sweet, it's to give...
You'll see that with other producers like Plantaray, they do add sugar and they tell you how much Plantaray, specifically, how much sugar they're putting in. Their sugar is there for the mouthfeel and the body.
We're talking about Demerara sugar, right?
Yeah. This is from Guyana Demerara Valley.
I would say that by no means would the... I mean, we sell some rums for people that enjoy things that are plusher and sweeter.
A lot of the South American, some of the South American stuff can steer that way, but I would say as a whole, El Dorado is by no means a sweet expression in general.
Correct.
Which some people, I think, sadly, that's kept a lot of people away from rum.
Dan, this smells lovely.
It's the hard cider of the spirits world.
This will be good with some hard cider, speaking of.
Definitely, definitely cast a straight.
Is it fiery?
A little bit. A little hot.
I'm loving the nose.
But in a good way.
It's so big.
This is a gorgeous rum. This is.
It's phenomenal.
I think this one's $99.99, maybe $89.99.
I mean, the complexity on this is so huge that this is one of the things that rum people try to encourage people who are skittish on trying it is to substitute rum in some cocktails you enjoy.
And since a lot of the world really knows a handful of cocktails and keeps repeating those, you'll see like old fashion has to be the most ubiquitous. Like, what do you like to drink?
It's usually Manhattan or old fashion when you're standing in the whiskey aisle. So, rum fashions have become kind of the thing I've heard more than anything else for, well, what should I do with rum?
This to me already has that citrus component that you would get, and then obviously the sugar components there.
So, if you like old fashions, but you don't want to have to mix a thing, some of these really complex rums deliver those flavors, they're just already there from the process.
And without the sugary hangover. Roger, I totally agree, like the candied orange peel quality of this, and there's a little bit of spice, and then there's like this earthy dusting across out too.
This is like the perfect bottle. If you are a bourbon fan and you're tired of chasing down bottles that don't exist, look at a rum like this. This is, it's cast strength, has a legitimate age statement on it, and it is just absolutely fantastic.
And it's a great, like if you're, again, bourbon drinker, want to try some rum, this is a great place to start. The next bottle is the 12 year El Dorado hand pick that we did, just a couple more years of age.
Is it also demerara?
Same thing across the board.
Yo, this smells like Madeira.
Yeah, you do get some of that oxidative quality for sure. Keep in mind this is aging in a hot climate.
In these handsome onion style bottles, you can feel like you're a pirate.
I drip every time I pour from that bottle, every time.
The other cool thing with El Dorado is they have one of the, if not the only, one of the only operating wooden stills, made out of green heart wood, which is used mostly to build docks and things so that the wood doesn't rot.
It's got a really, it's really resistant to rotting, but they actually have a still. They have stills that they are made out of wood that they are distilling rum with. That gives it kind of that like green.
That have been in use for over 100 years.
Yeah.
So when you hear about that naval rum ration, they were often sourcing rum from Guiana for it, and this distillery has kind of amassed all these different stills from around the country as sugar plantations went defunct.
So if you ever read about that and hear about sailors, you know, having this rum ration, you're literally drinking rum from a still that was used for over a hundred years to make that specific rum.
This one's great. It's like the other, but it's amped up, and the rich flavors are higher up.
Well, that's kind of the cool thing. Like Roger was speaking, gave awesome history there. Like he was saying, as these sugar plantations, who had their own stills, were closing, this distillery was accumulating all those stills.
So they have a variety of styles of rum that they blend together. These two are the wooden still we talked about, and then the French Savalle stills. Specifically, those two rums are what's blended in these bottles.
This is unreal.
The complexity on this is off the charts.
It's crazy.
Very Madeira-esque.
It is, yeah. Again, how much are these two rums?
These two rums are $79.99 and $99.99. $10.12? For the $10.12 year, so.
Cool.
Pick them up.
They are gorgeous rums. We do, we usually get a couple batches of these a year, but it's always good to pick them up because they, there's just nothing like them.
Awesome. You guys do good work.
We've talked about these, the stills before.
Yeah.
Yeah, so they replace parts, and so is it really the same still? Yes, I say it is.
Damn right it is.
Next, we've got-
Kill the romance.
I have the hatchet that George Washington used to chop down the cherry tree. It has had three new handles and four new heads, but it's the same hatchet.
That's got to be worth some money. Next, we've got-
It's not the same thing that was powerful. Never happened.
So, we've got Teeling, one of the disorders we really love in Dublin. Single Pot Still finished in White Wine.
Whoa.
Cass, this is really cool.
Okay, you know there's a whole world of white wines. We need more information.
It's in White Wine, Cass.
That's all you need to know.
White Wine, medium toast.
That's it. Okay, thanks. Take the chowder, man.
You only get to know is red or white.
Okay. You got to wonder how many barrel brokers were in the middle of that process. Guys, you got to pass that back around again.
All I can smell is rum. Okay, say this again, white wine, Cass.
White wine, medium toast, single pot still. A lot of times when you drink Irish whiskey, you're ripping shots of Jameson, and those are perfectly fine, but that is a very light. I mean, I'm just being honest.
Whoa.
Yeah, no.
It's a little crazy.
Most of the stuff on the shelf for Irish whiskey is a lighter fruitier style. Pot still is where you get that weight and that fattiness from the whiskey, and then this is finished in white wine cast. And I think the no is just like super vinous.
Yes.
Dude, this is like dropping a shot of Irish whiskey into a glass of Sauvignon Blanc.
Bombs away.
That's definitely what it smells like. Definitely.
There is a ton of wine character.
It's also cast strength, so it's 58.6% alcohol.
Need a warning next time.
Okay, so it has that really broad fruity white wine kind of nose, but it's laser focused on the finish. The palate is pretty bright and fresh, and then it's like the, I don't know, alcohol or acidity or something just dries up and clenches down.
Yeah. Yeah, it's the finish. It's just there, and you get that fruit, and you get the weight of the whiskey, and it's a really nice pour.
Nose is wild.
I mean, that's the most wine forward whiskey finish I think I've ever had.
It is not. You don't have to search for it.
It's there. Yeah, it's there. Okay, you got another one from Teeling.
And these are both $99.99.
This next one is Teeling Single Malt Irish Whiskey, and this is finished in Tequila Cask.
Hello. That seems like a Tequila Cask would trounce a Single Malt. Let's find out.
Well, let's see what we think.
Let's find out.
Tequila Cask. It doesn't scream Tequila on the nose. I wouldn't have guessed it.
There's, I mean, there's like a touch of agave sweetness.
I mean, I know that that's supposed to be there, so that might be part of it.
A mid palette. The finish is really interesting. It's like baked goods.
It's like an apple pie or something.
A lot of pear.
Yeah.
Pear tart.
Your little tin candies from England.
But yeah, this is nice. This one has more. I mean, the white wine cast was so Venice that it was all over the place.
This is more focused in the seat of whiskey.
I could see this benefiting from a little bit of water or ice. Open it up a little bit.
That's a good point with any cast strength whiskey. It's not necessarily meant to be drink that way. Certainly enjoy it how you like.
But, Lexi, what do you think about the word tequila being on this bottle?
Not a huge fan of Irish whiskey, so it was a roller coaster.
I like the front half of it, though.
The finish is screaming and living on and on, and it seems like a lemon bar with powdered sugar on it.
I like that. I definitely.
That's a good descriptor.
Pretty apropos. Lemon curd.
Lemon curd. How much of the tealing whiskey is that?
$99.99 each, I believe.
Neat.
Floral.
Yeah. Cask strength.
I added a touch of water to that second one. Tone it down a little bit for me.
Sure. Grandma's going to church.
We'll get you on the cask strength train sometimes.
It's not the cask strength that bothers me, it's the Irish whiskey part.
The Irish whiskey part. Did it hurt you?
The first one caught me off guard. I think that there just needs to be a warning label that says cask strength.
Oh, he said it.
After I already tried it.
I'll take the fall for that one.
That's okay.
Yeah, those are both great. I mean, Tealing makes good stuff. We usually have several different things from them on the shelf.
They're worth exploring. They make some good whiskey.
Awesome. Extremely unique. Is there some praise for taking it to a different direction with those?
Singular.
Moving on to American Whiskey now.
The first is, we're going to have a few here from Whistlepig. We have a great relationship with Whistlepig, and we buy a lot of cats from them.
I hear we have a lot of Whistlepigs.
Yeah, we do. A lot of options for you.
A lot of options.
This is the Farmstock Bespoke Rye that we put together.
I hate that word. Everything now has got to be bespoke.
I mean, I don't-
Of course.
Cut this out, but I don't like it either, but that's what it says on the bottle.
I'm sorry. Roger, how was the pipe convention?
There were some bespoke leather goods, for sure.
But I think the word bespoke, like literally pipes, smoky pipes come to mind. Yeah, fair enough.
But they're not, I'll tell you what, they're not using that word to describe it. A lot of these people, like.
A haberdashery.
Leather goods, beard creams.
The first time I ever saw the word bespoke was on a tie. I bought it Target and I had no idea what that meant.
It was on a tie?
It was like.
At Target?
Yeah.
Like the repeating pattern of the word bespoke?
It was like a little label.
Custom made, just for you.
Like, where yours says ties.com.
Yeah, yeah, it's a great value. I will full-throatedly endorse ties.com.
It's a great time. Anyway...
I'm glad that I now know where to... Don't buy my ties and we're not to buy my ties.
Don't buy them from socks.com.
Yeah.
Well, don't buy them from.
Wait, was it? Is that really what it says? I thought he was just doing a burn.
ties.com.
I'm not that clever, Roger. Come on. All right.
What are we doing? Whistle Pig? Whistle Pig.
This is a bespoke blend of ties.com rise. We have a blend. This is a custom blend we did at Whistle Pig in Vermont.
It's a blend of four-year Vermont rye, six-year Vermont rye, and six-year Canadian rye. It's at a really friendly proof. It is 86 proof.
Wait a minute.
So is it just North American? They don't even have a word for it. It's provenance.
Yeah.
Up until relatively recently, all Whistle Pig was being sourced from Canada.
Yeah.
And so they've been making Whistle this whole time, and now they're starting to... Some of their bottles are liquid entirely, and then they're blending their liquid into the other stacks they have of Canadian as well.
It says product of Canada and US. Well, that's fine. Canadian with ryes.
They're known for their rye.
All right.
I'm in, even if it says bespoke.
It's a Binny's Bespoke Blend, BBB.
Binny's Bespoke Barrel.
Barrel Blend.
Blend.
Bourbon.
Like Drupal B.
For big boys.
It's Bespoke Batch.
Batch.
Oh, even better.
I think the difference here versus a normal hand pick or single barrel pick is that we are usually picking a single barrel or a number of barrels, bottling them on their own because we think that they stand apart from the other things we've tried.
This is a blend that we tasted through the whiskeys, blended it in the ratios that we thought would be the best, and this is what we came up with.
Why are they using such a giant batch number? Have they really done 305,000 batches?
I believe that.
305020.
Oh, I...
This smells on the nose like it's more on the bright and sweet and easy drinking side, not on the hard and spicy, but we'll see how it is on the palate. What's the alcohol in this one?
It's 86 proof, so very friendly.
Oh, yeah.
$69.99, I believe.
Do you know what kind of oaks they use for these?
It's American oak, the 4-year Vermont and the 6-year Canada are char No. 3, and the 6-year Vermont is char No.
That is a pleasant ride.
Yeah. I mean, there's some spice, there's some herbs on the nose.
Some vanilla.
A little vanilla.
Honey and vanilla that bourbon drinkers would dig.
I'm thinking this is for bourbon drinkers, definitely.
I like that, actually.
$59.99.
$59.99. Oh, $59.99. Is that a Mops price?
Yep.
Yeah.
And you only brought one Whistle Pig?
No, God, no.
Oh, he's one out by the other Whistle Pig.
This one's in a box.
This one's in a box.
So you know it's better.
I recommend if you have the money to do it and you are looking for a crazy wild party, you buy a couple Whistle Pigs and you have a tasting evening and you try them all.
Like marmots or you're talking about the whiskey. The whiskey.
Yeah.
Oh, Whistle Pigs. Yeah.
Well.
No, I mean.
With bacon flights?
Okay. This is Cask Strength 15-year Whistle Pig, Binny's Hand Pick. This is the Binny's Ace.
We did a couple of these the last time. This is the one I grabbed, but I mean 15-year Whistle Pig.
Look at that color. Yeah. Gorgeous.
It was Cask Strength, correct?
This is Cask Strength.
It's got a very heavy metal cork, so you know that...
Is there an oomla on it?
Yeah, cork's like, one-way ticket to midnight.
Who is Ace in the Pantheon of Things? The hardest thing about doing Whistle Pig Hand Picks is naming it after pig things.
I had the opportunity to name our last batch of Whistle Pig Picks, and we've done it so much that I had to, instead of doing different types of sausage and ham that we've done in the past, I did dogs that appeared in pop culture that featured pigs.
The names of the dog, like the name of the dog in Charlotte's Web, and the name of the dog in a movie with pigs.
You're like the entire craft beer industry and running out of names.
Right.
I like the departure from meats and the arrival into the dog section of it.
As many pork products as there are worldwide, we ran out. I enjoy it. So 15-year rye, can I get a price check?
It smells delightful.
There's a heavier fruity presence, like raspberry jam or something like that.
Yeah, red fruit for sure.
Like almost like compote. It's like a little darker, you know?
Yeah.
Ace, $299.
Oh. So this is $299.99. Comes in a box and it's $300.
And it has a heavy metal.
Wait till you see what's next.
Oh, my.
You know, they spoil it sometimes.
It's a big punch.
Yeah, that is so like rich and fat on the palate.
They don't hide the wood.
No, it's got, I mean, 15 years, that's going to happen even in a, you know, cooler climate like Vermont. That's fantastic.
It's tough for me to describe. It has like cocoa and cola kind of qualities.
Oh, cola for sure.
Old timey flavors in this. I'm taking this.
Yeah.
Whorehound candy.
Whorehound candy. Yep.
Nailed it.
The heck is a whorehound candy?
It's a legacy candy that old guys like Roger and me remember. It comes in bags and a barrel.
Kind of like, think like licorice root beer.
Oh, love it. I love it.
Yeah, it's in the sarsaparilla family.
Yes, sarsaparilla adjacent. For all you birch beer fans and sarsaparilla heads.
Yeah, right. Okay, the box escalation is getting absurd. This looks like a vinyl set, like a set of ten inches.
Is there a poster in this?
This has, I mean, you name it.
This is like Mary Poppins' bag. Whatever you want, I will put it here. This is the 18-year Binny's handpicked.
Ooh.
It comes with two bottle stoppers.
It's such a nice box, it's very difficult to get the bottle out.
Ooh, the bottle keeps getting progressively larger as well.
Yeah, this is kind of silly.
Okay, if that lasts, it must be 300 bucks.
Wait, I want to see what that little gold thing was in that box.
Yeah, yeah. So it comes with a custom bespoke.
Whoa.
It's a cap cork that's made out of some sort of glass. It's a beautiful bottle stopper. And it says Binny's on it.
And it looks like an old doorknob.
Yep.
Wow, it says Binny's on it?
That's really cool.
This is $5.99.99.
De-vossed into the metal.
I want that in my hand. I want to feel the weight.
And it's pretty cool. 91% rye, 9% malted barley, and it's new American oak and PX sherry casks.
Ooh.
And we're talking about 93.9 proof here.
You could do some damage to somebody's windshield with that.
Sure. It would look...
Oh my gosh. Okay, smell it. Oh, it's humongous.
Super interesting.
What is that?
It's like... Well, how do you describe that?
Rancio. Reminds me of a really old...
Rancio...
. cognac or armagnac.
Yeah, it's like a fruit, but a fruit that is very ripe, like banana.
Well, it's got the PX sherry cask too, so that's definitely going to give some influence.
What's it say there?
Oh, I missed that part. It's a pig snout.
Totes of orbs. The multifaceted collector's cap, which is too big.
That is so nice on the nose.
Right?
This is enormous.
I mean, it's like ribbons of caramel, milk chocolate, toffee, with fruit, and yeah, just the depth and complexity here is.
What are the blend components of this? Oh, it's single barrel?
It's a double barrel, single barrel, so it's first aged in New American Oak and then finished in PX sherry.
Okay.
The 15 year is getting weighty and it shows its age and it's woody and it's kind of severe. This is fun and it's fresh and it doesn't... If you would...
Just based on the color and the flavor profiles, I would have guessed this one is younger than the 15, but holy cow.
Well, and the 15, keep in mind too, is cast strength, so this one, the 18 is not cast strength, so some of the color is there, but yeah, just the richness and the complexity, even for something that isn't Barrel cast strength.
Well, and like the 15, the fruits are red fruits, and here, we talked about Vinness earlier.
There's a white wine quality to this, and it's kind of like Madeira or Sherry or something, but it's also kind of like, I don't know, like Riesling or something like that.
Yeah, there's a lot going on here. There's like a berry character, almost like raspberry, that's super interesting.
Oh yeah.
Very unique.
Reminds me of like those raspberry candies that come in a little tin. You know what I'm talking about?
No.
Oh, they're like the pear drops, but they're raspberry.
But they're raspberry.
But I get a lot of that. And this.
Flexi? You like?
One moment. I do. I think I just struggle because these are just not for me.
These are not, these are just not, they're very far from where my palate lies. It's something that I am enjoying. It's something that I will probably not try again.
Look at creaminess on top, like a meringue or something like that.
Yeah, for sure.
It's almost like, yeah, it's just vanilla.
These would be fun to pair with desserts. Like this has this very interesting, the fruit quality is, I think this could go well with all sorts of different things. Crème brûlée.
I think like an apple tart or like an apple, what's the thing the Germans think?
Strudel. Like this on the side, yeah, and like fresh cream.
I like the buttery-ness on the nose. That was delightful, but did you not get that or is it just me?
No, it's on there.
No, it's for sure.
It's so multifaceted.
It's weird.
Definitely a celebratory pour would be really nice from the holidays.
Well, now my glass has been empty for a minute and just the aroma is like, it's like I stepped into a Rick house.
In terms of barrel wood.
Yeah, just like that really nice mature wood, like you know you're in a Rick house full of aging whiskey.
Yeah, it's kind of a cedar quality that reminds you of a humidor.
100 percent.
Where do we go from here?
We're going to our friends over in DeKalb.
Nice people. Whiskey Acres.
This is a...
In the shadow of the Facebook campus.
This is our, it's what we call a boomerang barrel. So we had a Cognac Park Cognac barrel that we did a hand pick up several years ago. And then this is six-year-old Whiskey Acres bourbon that then spent two years in Cognac Hacks.
Okay, full disclosure.
I got some of this as it was pouring from the barrel into the receptacle in a glass. And it kind of hurt. I didn't know that I had cuts on my hand until, until this gushing whiskey was flowing over my hand.
But yeah.
There's a really cool video on all of our social channels. If anyone wants to see that process of the bottling.
The bottling, yeah.
Head on over to Binny's Bev anywhere.
Dan, you were there. You were in Sticker Duty.
I think I was, I was, I had the, no, I was, I was doing that and then I was shrink wrapping the plastic onto the cap.
That's an important job.
It is.
No, this is Cast Rake Nonchal Filtered. I think it turned out great. If you're living in the western suburbs, this is going to be a little sparse, but it is in a lot of our stores still.
Definitely pick it up at the nice price of $69.99.
I told myself I was going to buy this. I forgot to. This is wonderful.
But yeah, you get that like raisinated fruit and the aroma from the Cognac Cask.
You have to look at an extra layer on top of.
They're good bourbon.
And if you don't know, Whiskey Acres is a state distillery. They grow 100% of their grain. They are farmers first, and they make excellent whiskey second.
Grain to glass here on Barrel to Bottle.
That's really nice.
The Cognac does have a lot of...
That's a very good whiskey. And it's cool to try a Cognac Barrel finish. It's not something you see that often.
That also means that it was a bigger barrel, so there's more whiskey in there.
And that means that it's still on its way out, though, right? Except for the western suburbs where it's a little harder to find.
Obviously, the closer you are to Whiskey Acres, this is sold a little faster, but it's still out there and it's still around.
Pick it up. That's a unique one.
The last thing is our pin hook. They call it True Small Batch because we chose a small number of barrels to blend together. Actually, this is made up of four barrels.
That's five-year-old cast-strength bourbon from our friends at Pin Hook.
That's funny because by law, there's still really no definition for small, right?
So, a small batch doesn't, you know... A lot of my favorite bourbons are from very large producers and they say a small batch on them. They're still great whiskies, but this is truly...
It's a lot of barrels.
Yeah.
Right. It's a lot of barrels. This is made from four barrels.
So, Castle & Key is where Pin Hook's whisky is made, which is the old... the former old Taylor Distillery. It's a lot of history there.
Beautiful space.
That's the one that was like totally ruins almost, right?
Yeah.
Some of their bottles are... For Castle & Key, they have their rye is called Restoration Rye, I think, to acknowledge that.
This is higher toned. Like, orange bitters?
Something like that?
Kind of, yeah.
That's spicy. Like, it's spicy on the nose.
Yeah, this is like... This is like bourbon. Like, if I were just to say...
If someone said, I've never had bourbon. Here, smell this.
This is...
When you were talking about a Rick House before, this is like whiskey soaked oak. Oh, yeah.
Man, it's enough maturity that the oak's there, but at five years, it still has some freshness to it.
That's really nice.
What's the proof on that?
It is 119.1 proof.
Interesting.
Yeah, that's relatively high proof.
I think it's got that classic, speaking of old-timey candy, Bit-O-Honey flavor.
Hey, oh, there we go. What was the other one that was in a red and yellow Sally something? Was this a fever dream I'm having?
Sugar daddies, sugar babies.
Oh, something B, sugar babies.
Dare I?
Yes.
All right.
I said that that pinnacle was the last one, but anytime I get the chance to, I like to talk about this Dewar's Double Double. 21-year Ruby Marsala cask finished that we did in Scotland with the master distiller of Dewar's. Let me pass it around here.
That's really cool.
Double Double, just basically they're recasking and recasking.
It's 21-year-old scotch. We have it at a really incredible price right now, so check it out.
We have definitely tasted this on the show before.
Yeah. It's great to revisit because for this price, you don't often see 21-year-old scotch.
I feel like this too suffers from the age-old. We've talked about this with purveyors like Jim Beam.
If you're a bigger house, you can make some of the most amazing whiskey in the world, but then people just identify your brand with your budget offerings. So it's like, don't fall into that trap.
It's awesome that they make budget offerings too, but also making some of the best whiskey out there.
This is amazing.
It's not overwhelmingly band-aidy.
That's a great note.
Yeah. No, I mean, it's got no peat at all. It's an elegant scotch.
It's got some fruit from the Ruby Marsala cask. We also carry... There's other double-doubles that you'll see on our shelf.
Right now, there's one called Magma, where they put like a lava stone into the barrel.
You're furrowing your brow as though that's some kind of...
I wrote about it, so I'm trying to remember what I wrote.
Was it a warm stone or cold?
I think it was a boiling lava hot lava stone. The idea was to use it, I think, to toast the barrel, if I remember correctly. It's like...
They call it Magma toasted.
Magma toasted.
Don't let the... I mean, Dewar's budget whiskeys are perfectly good. In fact, that relaunch of their 12 year, that I know you guys have tried on the podcast before, is an excellent whisky, and they make really great whisky.
Don't let the name scare you. It's worth picking up.
Especially now, while it's on sale.
Especially now, when it's very low price.
Yeah. You know you guys do good work, right?
We try.
We try.
We have tons of hand picks all the time on our shelves. Check them out. Talk to your local spirits consultant at your local Binny's.
They will help you find something good if you let them know what your taste profile is. And as we've seen here, we do whisky, we do rum, tequila. We have a gin hand pick sort of thing coming this summer too.
So we'll have a little podcast about that too. Yeah, we do a lot of cool stuff. We have great relationships with our suppliers.
It gives us opportunity to bring awesome things to ourselves and to your classes.
I think you're pushing the spirits world forward with some of these releases. I think it's great.
That's what we hope for.
I think something else to remember, there's literally something for everyone here. Absolutely.
She wants to go back to the tequila.
Yeah, that's basically what I'm trying to say.
Hey, you die to it too. It's getting warm out.
We always offer these cast strength things. I can't emphasize enough. I can't stand when people try cast strength and then tell me it was too hot.
Then I go, well, did you try dialing in with some water or ice? I go, no, I don't add water or ice to whiskey. Well, it's cast strength.
It's okay. Here's your permission. Yet again, you do not have to drink cast strength straight.
We do this so that you can drink it how you like it.
I would argue that every time I put a couple of drops of water into a cast strength, especially with scotch, but really any cast strength whiskey, it just opens it up in a way and you can smell more of it like things.
It's more complexity in the aroma, the flavor changes, and it's really worth doing if you've not done it before. It's not a regular practice of yours.
Cool.
All right.
Thanks, Dan.
Thank you. Binny's Handpicked.
Quite a lineup. Those rums are the bell of the ball for me. Those are phenomenal.
Pretty great, yeah.
The Whistle Pig 18, and I don't have a pocketful of cash.
Yeah.
No, that was good. It's fun to be able to try stuff like that. Cool.
Well, thank you. And check out our handpicks.
Good stuff. Hey, if you enjoy this podcast, leave us a review on podcasts. And if you want to talk to Dan, you can email him at spiritsofbinnys.com, and there's a one in four chance that he'll reply to you.
Yeah, one in four.
One in four.
He's almost certainly the Dan will reply to you.
