Sparkling Wine Types and How They Taste

Bubbles are produced in wine regions all over the world and each area contributes something special to these refreshing wines.
 
Champagne is considered the gold standard and is made from Chardonnay, Pinot Noir and Pinot Meunier, though all three grapes are not required.
 
Blanc de Blanc is a sparkling wine made from white grapes, whether from Champagne or other regions. Blanc de Noirs are made from red grapes with just a light skin contact during fermentation. Rosé sees more skin contact and is a beautiful pink.
 
Prosecco has a softer bubble structure and is fruitier. In Italy, you will often see a glass on you table as you sit down. It is the quintessential welcome wine. Lambrusco is from Northern Italy. These dark red bubbles are full and fantastic.
 
Cava is the bargain of the sparkling world. Made like a Champagne, but from Spain and thoroughly refreshing.

Champagne and Franciacorta are all wonderful places to explore. Anderson Valley and Carneros in California and Oregon, also produce some impressive sparklers.

When pairing sparkling wine with a meal or hors d'oeuvres, think caviar, smoked fish, chicken & waffles — if you want to keep it easy, a grocery rotisserie chicken is a quick alternative, and grilled salmon with a side of vegetables like asparagus or morels. You don't need to be fancy here, have fun.
