A Bright Modern DIPA With A Gnarly Hop Bill

Interest in West Coast IPA is on the rise, perhaps in part because it’s a style that continues to evolve. In Southern California, several brewers are redesigning the classic West Coast template, steering away from caramelized malts and focusing squarely on generous additions of vibrant new hop cultivars. Curious about this new approach, we wanted to bring one to our shelves, but would the leaner golden malt lattice be strong enough to support the massive hop bill of the modern DIPA? Could we shoot that curl, or would it all come crashing down?

Naturally we turned to our friends at Half Acre, renowned masters of all things IPA. Over the past decade, Half Acre consistently brews some of the best IPAs on our shelves. Their commitment to quality control and the science behind brewing makes them a standout in the Chicago craft scene.

In the process of designing the recipe, we sat down with brewer Ryan O’Doherty and hand selected an all-star lineup of hops. Krush and Strata, a pair of standouts from our last collaborative project with Half Acre, once again won us over. The newly named Krush is taking the craft scene by storm. When we selected it for Field Expression, it was still an experimental, known as HBC-586. The Hop Brewing Company is responsible for creating some of the most beloved hops in the business – Citra, Mosaic, and Sabro to name a few.

When we first tasted Strata hops, they were known as Experimental Hop X-311. We were instantly hooked. Indie Hops released Strata in 2018 and it delivers a dank and tropical flavor that reminds us of fresh jackfruit.

Strata and Krush are joined by Nelson Sauvin and Riwaka - a pair of legends from New Zealand. Riwaka is famous for imparting pronounced passionfruit character. Nelson Sauvin hops are so named because they are grown near the city of Nelson and deliver a pronounced gooseberry flavor and aroma - a common descriptor for Sauvignon Blanc wine.

The finished brew is quite a ride. Hats off to Half Acre, you’ve done it again. Binny’s is proud to have partnered on this project. Under The Falls is a world-class IPA!

Pouring deep golden in color and sparkling in the glass, the vibrant aroma of mango, fresh guava, and green gooseberry float above a crown of white foam. Medium in body, it glides softly across the tongue, leaving the palate awash with flavors of pineapple, passionfruit, and nectarine. The big juicy finish is refreshingly bold, with lingering notes of gooseberry, golden raspberry, and white grapefruit.
