When it comes to imperial stout, we see a lot of pastry stouts these days. This category includes stouts modeled after all manner of desserts, and we’ve seen everything from cookies to whole chocolate cakes dumped into beer.

To celebrate our 70th Anniversary, we headed to Firestone Walker’s Barrelworks facility, home to their award winning wild and sour ales. Our goal - to blend California terroir with a tropical treasure of the Midwest, the paw paw fruit.

We fell in love with Pollyanna Fun Size at first taste and its ramped up imperial cousin left us speechless. Eager for a glimpse at the magic behind this remarkable beer, we took a trip to Pollyanna to brew a batch.

Noon Whistle is a remarkably open place. From propped doors and windows, to a wide-open brew house, a visit to their Lombard location is an unobscured look at the laborious world of brewing.

A crisp, tart, and refreshing twist on the classic daiquiri, famously enjoyed by writer Ernest Hemingway. Unlike the traditional version, this cocktail swaps out sugar for maraschino liqueur, balancing the bright acidity of fresh lime and grapefruit juice with a hint of sweetness. A timeless favorite that delivers a bold yet smooth citrusy kick, perfect for warm weather sipping.

The Gold Standard sets the bar for excellence. The heavy combo of sugarcane spirits creates a golden hue, and the fresh lime and syrup adds sweet and citrus flavors. Move over Mai Tai, we have a new rumtastic cocktail in house.
