This week we escape the cold winter greyness with the bright Latin flavors of Chicago’s 5 Rabbit CervecerÍa. These intrepid brewers turn to Central and South American cuisine for inspiration, using a wide variety painstakingly sourced ingredients at various stages of the brewing process.

  Founder Andres Araya (seen here in blue) explains the great lengths they go to in order to incorporate these unique flavors. For a collaboration with Florida’s Cigar City Brewing they caramelized hundreds of plantains on a small stove in the brew house.

  What makes a great brewery tour even better? Pulling pins and tasting beer right out of the barrel! Inigo Montoya (we love the movie reference btw) is bourbon barrel aged Yodo Con Leche. Hopefully they lay down more of this rarity next time around because it is incredible!

  5 Rabbit is currently experimenting with a small solera of sour beer. Sampled still and at room temperature, it was remarkable. Reminiscent of a classic Belgian lambic, we hope to see this make its way into bottles someday.

  With the help of local artisans, 5 Rabbit transformed an unassuming corner of their warehouse into a warm and inviting taproom. From tables made of reclaimed wood to the artwork on the walls, 5 Rabbit’s space has character. So do their beers. To our generous hosts, we say gracias.
