"Hints of toffee and anise run through the fresh quince paste, coffee, pastry and candied orange peel flavors in this supple Champagne, which sports a rich flavor profile in a restrained package, with a smoky note echoing on the finish."

2007 Agrapart & Fils Extra Brut Blanc de Blancs Mineral

"As usual for this bottling, originating with two neighboring 40-year-old parcels in Avize near the communal line with Cramant, and vinified roughly half-each in tank and cask, Agrapart’s 2007 Extra Brut Blanc de Blancs Mineral is only coming onto the market this fall in France, and the bottle I tasted in June – with a written-over 2006 label – had been disgorged in January of this year solely for purposes of press tastings. Pleasantly piquant aromatic suggestions of sourdough yeasts, toasted buckwheat and lemon rind have their persistently stimulating counterpart on a strikingly delicate and nuanced palate, with stone, chalk, salt and smoke accenting fresh apple and winter pear. With time, a more caressing textural side emerged. The sense of salivary gland stimulation in the lingering finish is extremely active, and combined with tactile impingements of chalk, radish, lemon rind and active yeasts (figuratively speaking, of course). This is certainly less obviously multi-faceted and energetic than the corresponding “Terroirs” bottling, but utterly intriguing, impressively refined, and likely to merit at least a half dozen years of attention."

Laurent Perrier Grand Siecle Glass Set

"Light, bright gold. Mineral-accented scents of pear skin, orange pith and white flowers are lifted by a gingery nuance. Pliant, dense and rich, with palate-coating orchard fruit and spicecake flavors and a smoky mineral quality building with air. Weighty and broad but energetic, with bright minerality adding lift and cut to a strikingly persistent finish."

2004 Dom Perignon

"Lily-of-the-valley perfume and scents of lightly toasted brioche and almond rise from the glass of Moet’s 2004 Brut Dom Perignon, along with hints of the apricot, pear and grapefruit that then inform a luscious and creamy yet strikingly delicate as well as consummately refreshing palate. Sweet-saline savor of scallop – also already intimated in the nose – lends compulsive saliva-inducement to a ravishingly rarified and persistent finish, joined by alkaline, nutty, liquid-floral, and nori seaweed notes for a performance of head-scratching subtlety and intrigue."
