"The 2010 Chablis Les Preuses is offering a glorious display of the mysterious and complex allure possible from its site. Chalk dust, a hint of petrol, maritime salinity, alkalinity, white truffle, sushi-grade scallop and white peach shimmer and mingle in a riveting aromatic and soothingly silken yet animating not to mention saliva-inducing palate performance. This finishes with memorable, mouthwatering length deserving of a standing ovation."

2012 William Fevre Chablis Vaillons

"This is clearly riper than the Montmains with hints of dried yellow orchard fruit on the otherwise classic Chablis aromas of green fruit and wet stone. There is a beguiling succulence to the intense, precise and mineral-driven middle weight flavors that culminate in a clean, bone dry, balanced and strikingly persistent finish. This is one the best examples of the Fèvre Vaillons that I have seen."

2011 Domain Servin Chablis les Preuses

"A somewhat leesy character dominates the otherwise ripe fruit and mineral reduction notes and it's clear that this needs to be racked. There is a slightly exotic element to the rich and notably opulent flavors that possess outstanding intensity on the salty finish that, interestingly, exudes a minty character. While not altogether typical, this is a very impressive effort as the depth and persistence are first-rate."

2011 William Fevre Chablis Bougros

"This also displays an abundance of classic Chablis character with iodine, tidal pool and ripe green fruit aromas that precede dense, muscular and overtly powerful flavors that culminate in a saline-infused and impressively persistent finish where a touch of wood surfaces. As Bougros typically is, this is a big wine with almost painful intensity. While this slightly smoky effort isn't particularly refined, it is certainly dramatic and imposing."
