Goose Island Night Stalker has been bottled for the first and only time, and you will find the lions share at Binny’s.  Previously, Night Stalker has been extremely limited and only available on tap. It is an imperial stout and is part of Goose Island’s Heavyweight Ales series, which also consists of Demolition and Bourbon County Stout.

Night Stalker is a monster of a beer, clocking in at 11.2% ABV and 60 IBU’s. It is on the hoppy side for an imperial stout, as it is gushing with Simcoe and Mt Hood hops. The “midnight” color of the Night Stalker is derived from the six different types of malts used during the brewing process. We asked Glen Ellyn beer buyer Anthony Gerdt what he thought of Night Stalker:

“This is a huge, kick you in the mouth beer.  Dry hopping really comes through, with big grapefruit, apricot and resin aromas competing with the assertive smoke to create an aroma that makes me think of Old Rasputin on steroids.  In the mouth it a was a huge mess of smoke, roasted malts, alcohol and citrus flavors that will destroy anything that you attempt to pair with it (or at least any of the cheeses I tried it with...)”

475 cases may seem like a lot, but this beer is highly sought after, and as Anthony put it, “good trade bait” as it is not available in many markets. Don't miss you opportunity to relish the elusive Night Stalker.
