Confessions of a Mixologist: Adonis

Sherry has long had an unfair reputation. Dismissed as the stuffy drink of choice for aging British aristocrats, or sickly sweet jug wine more suited to cooking than drinking. Fortunately the variety and quality of sherry is being rediscovered. Sommeliers and bartenders are putting it back on menus and serving up classic, sherry-based cocktails from more than a century ago. This cocktail takes its name from the musical “Adonis,” one of the first Broadway hits back in 1884. Easy to prepare and lower in alcohol than most cocktails, it’s a fine way to begin an evening, or end one. I’ve seen some recipes that call for fino sherry, but I prefer to use oloroso or amontillado, such as the ones from Lustau. The richer, rounder flavors of these sherries pair well with a more full-bodied sweet vermouth like Carpano Antica. Orange bitters are key as the citrus pulls it all together.

Hop Vapin’ with Lagunitas

Tagged:

Brewers Mary Bauer and Joe Flores of Lagunitas Chicago recently led an exciting seminar on hops at Binny’s Lincoln Park. To enhance our understanding of hops, Lagunitas placed ground hops into a volcano vaporizer. As different beers from Lagunitas were sampled, attendees got a whiff of a corresponding hop used in that beer.

Binny’s Wheeling is now open! We’ve closed our store in Buffalo Grove after 22 years and moved just a few blocks away to Wheeling. Our new home in Wheeling is 20,000+ square feet and has a 21 door beer cooler, a temperature controlled wine cellar for fine and rare wines, a walk-in humidor and the widest selection of 8,500+ wine, spirits and beer products. The spacious interior has tall ceilings and large aisles for a more comfortable shopping experience. You’ll notice something new – a much bigger store – but you can still count on the personal touch, knowledgeable service and low prices that have been the mission of our local family-owned business since 1948.

The Dark One Draws Near – Are You Prepared?

For those lucky enough to have snagged a ticket, one of the years most anticipated beer events is just around the corner. Each year throngs of 3 Floyd’s devotees from all around the country make a pilgrimage to Munster to celebrate the release of Dark Lord Russian Imperial Stout. For the uninitiated, DLD is quite an experience. Great beer and food abounds, but get ready to wait in some amusement parkesq long lines. Thankfully 3 Floyd’s allows attendees to bring bottles of beer to share with fellow craft compatriots. As such, DLD represents much more than just the beer from which it takes it’s name. It’s in these lines, that some of the most imaginative and carefully crafted beers in the world are shared with friend and strangers alike.

A Visit from Winemaker Philippe Guigal

Tagged:

On a recent visit to Chicago, Philippe Guigal shared a sneak peak of his highly anticipated 2015 white wines. White accounts for 2% of Rhone Valley’s production so these are easy to overlook. However, at Guigal, white wine is 20% of their output, so there must be something to it, right? Could this be the next “big thing” in wine? After all, these wines are the perfect middle ground and are a great opportunity to try something new: lighter and zestier than Chardonnay and more guts than a Sauvignon Blanc. Across the board these wines show excellent balance, structure, and kaleidoscopic flavor, with near endless possibilities for food pairing.

Binny's 767 Golf by Kristoff

767 Golf Binny’s Exclusive by Kristoff 5×44

Its getting to that time of year where we pull the golf clubs out of storage and dust off the winter cobwebs on our swings. Oddly enough this cigar has nothing to do with the sport, but a reference to the very first place Binny’s had a humidor. 767 Golf is the address of the very first Binny’s Beverage depot as we know them today and the history behind our humidors starts there. This corona was made for us by the fine folks at Kristoff cigars and is an exemplary example of a premium cigar. Whether you’re going to hit a bucket of balls or relaxing on the porch the 767 golf has you covered.

A Visit From Olivier Krug

Olivier Krug’s presentation resonated with me early when he spoke of pairing my two passions, music and wine. “Music is important to Krug” he said, “The experience is about what you feel”. I’ve always thought of my love of wine and my love of music separately, but it was enlightening to hear him speak passionately about intertwining both. Music proved an especially apt metaphor as he presented his four wines. The first three were all top notch wines that any Champagne house could claim as a tete de cuvee. But not Krug, whose non-vintage Grand Cuvee enjoys pride of place. Compared to the first three, the Grand Cuvee is a harmonious whole, with the other three sounding a strong note.
